Vegan Muhammara Meat Stew
w/ Couscous
Have you ever heard of Muhammara Sauce? I never heard of it before but I do love the brand Chosen Foods & this sauce had a kosher certification. I always like to try things I find that are kosher! This sauce has such a Middle Eastern vibe & really gave this "meat" stew so much flavor. It sort of reminded me of a Moroccan fish dish I used to eat. So, I looked up where the sauce originated from & its origin is from Aleppo, Syria. Muhammara is traditionally made with red hot peppers called Aleppo pepper aka the Real Syrian Pepper.
It's spicy & it is used mostly in Middle Eastern cuisine. It's super DELICIOUS!!!
Ingredients:
Meat Stew
1 small Purple Onion
4 Garlic cloves
2 medium Carrots
2 yellow Potatoes
2 Celery stalks
3.5 oz Beech Mushrooms (or whatever mushrooms you find)
1 package of ground Beyond Meat (if you can only find the burgers, use 4 burgers)
1 jar of Chosen Foods Muhammara Simmer Sauce
1 cup Vegetable Broth (or water)
Couscous
1 cup Couscous
1 ½ cups Water
Instructions:
Dice onion & finely slice pieces of garlic. In a medium (2 qt) saucepan add a quarter of a cup of veggie broth (or water) & saute on a medium-low flame.
Wash & peel the potatoes, celery & carrots. Cut them into half-inch cubes & add to the pan.
Then cut the mushrooms into small cubes & add them to the pan. Add another quarter of veggie broth into the pan.
Break up the beyond meat by either chopping it with a knife or break it apart with your hands. Then add it to the pan.
Add in the jar of muhammara sauce & the rest of the veggie broth. Cover & stir occasionally. Cook on low for about 30 minutes.
In the meantime, in another small pot boil 1 & a half cups of water. When the water boils add in couscous & shut the flame. Keep covered & let sit for 5-10 minutes.
