Tah Dag (Persian Rice) & Okra Lentil Curry

w/ orange zest & mint yogurt

1 cup of soaked Lentils (soak ½ cup of dried lentils overnight or for a few hours)

1 cup of minced Yellow Onion

1 medium-size Carrot

1 Garlic clove

14 pieces of Okra (or two cups of quarter-inch slices of okra)

1 (400ml) can of Coconut Milk

1 ½ tbsp. Tomato Paste

½ tsp. Turmeric Powder

½ tsp. Chili Powder

½ tsp. ground Cinnamon

¼ tsp. Sea Salt

1 cup of White Rice

4 cups of Water

1 ½ tbsp. Avocado oil

1 tbsp. Vegan Yogurt

1 ½ tbsp. Goji Berries

2 tsp. crushed Pistachios

¼ tsp. Sea Salt

tsp. Saffron Powder (don’t have saffron use turmeric powder to give the rice its color.)

tsp. Black Pepper

Orange Zest Mint Yogurt Sauce:

¼ cup Vegan Yogurt

½ tbsp. Fresh Mint, minced

Zest of an Orange

¼ tsp. Rose Water

Garnish 6 lightly crushed Pistachios, 2 tbsp. Pomegranate seeds, and 3 mint leaves

In a 3 qt. sauté pan add enough water to cover the pan lightly. Add in the minced garlic and onions. Sauté until the onions become translucent.

Cut the okra anywhere from a quarter to a half-inch slices.

Add the okra, lentils, coconut milk, and tomato paste to the sauté pan. Cover the pan and keep the flame on a simmer. Cook for about 25-30 minutes.

  1. While the curry is cooking start prepping the rice.

  2. Rinse the rice until the water runs through clear.

  3. In a 3 qt. pot add rice with 4 cups of water. Add in saffron powder (or turmeric if that’s what you are using). Bring the water to a boil and then cook in rice for about 5-7 minutes. The rice should be al dente.

  4. Drain the water from the rice. In a bowl mix the rice with yogurt, crushed pistachios, goji berries, black pepper, and salt.

  5. In a pot add 1 ½ tbsp. oil to the bottom and keep the flame on a low-medium. Add in the rice and cover the top with a paper towel (this helps keep the steam in) and place the lid on top. Cook for about 15 minutes. The rice will get a nice crispy texture but also be soft.

Yogurt Sauce

In a small bowl mix together the ingredients for the orange zest and mint yogurt sauce.

Place rice in a large bowl with the curry and top with sauce and garnish.

Serve and share with love!
