Rice & Lentil Veggie Wontons w/ a peanut & balsamic dipping sauce


It's the best when I am able to make a recipe that I love getting at restaurants. There are so many different methods of folding wontons. I believe the one I chose is called the Diamond.

It seemed the easiest one to keep all the filling in.

You can try different technics by watching youtube videos.

I also preferred to steam the wontons first.

I find it cooks the wrapper enough before so I can use less oil when frying. I do like steamed wontons but let's be honest, nothing like a crunchy wonton!

Rice & Lentil Veggie Wontons

w/ a peanut & balsamic dipping sauce

 

Ingredients:


25 Wonton wrappers...size 3.5x3.5 (i used the brand twin marquis hong kong style)

¼ cup Avocado oil (for frying or use any oil that can handle high heat)

½ cup Wild rice

½ cup Lentils

1 Yellow onion

3 CLoves of garlic

6 Crimini mushrooms

2 heads of Broccoli

2 cups Spinach

½ tbsp dried Parsley

½ tbsp dried Rosemary

½ tbsp Garlic powder

1 tsp Onion powder

1 tsp Soy sauce

¼ tsp Liquid smoke

¼ tsp Black pepper

â…› tsp Sea salt


Dipping sauce:


1 cup creamy Peanut butter

1 tbsp Balsamic vinegar

1 tsp Soy sauce

¼ tsp Ginger powder

optional: ¼ tsp Chili powder



Directions:


  1. Cook rice & lentils according to their directions on the box.

  2. While the grains are cooking, mince garlic & onions. Sautee in a saucepan with a little oil. Saute until they are translucent.

  3. Cut the broccoli into tiny pieces & add to the pan. Cook until medium soft.

  4. Then cut the mushrooms into slices & again into quarter-inch cubes. Saute in the pan until they begin to shrink, stir everything often.

  5. Once the mushrooms look cooked enough, chop spinach & place into the pan until wilted.

  6. Add the lentils & rice to the veggie mix with all the spices. Then let cool enough for you to be able to touch

  7. Take a wonton wrapper in your hand. Add about half a tbsp of filling into the center of the wrapper. Then wet the edged with a little water & fold into a triangle. Press the sides to make sure it is sealed tightly. Then take the two bottom sides & add a little water to press them together. Place them on a plate or tray & repeat until all are made.

  8. If you want to steam them or to steam them first: Place about ¾ cup of water into a pot & use a steamer (i used this steamer).

  9. After they have been steamed or just wanted to fry them: Add oil to a saucepan, once the oil is hot place the wontons bottoms down. Cook until golden brown.

  10. In a small mixing bowl add the dipping sauce ingredients together.

  11. Place the wontons on a plate & dip the wonton into the sauce ...
