Raw Rainbow Carrot Slaw

Vegan ~ Gluten Free

Ingredients:

3 Rainbow Carrots (1 of each color)

2 tsp chopped fresh Parsley

1 tsp chopped fresh Mint

½ tsp Lime Juice

¼ tsp Apple Cider Vinegar

tsp Sea Salt


Directions:


  1. Wash & peel carrots. Slice them into match sticks & place them into a bowl.

  2. Finely chop up the parsley & mint. Mix into the bowl with the rest of the ingredients. I like to let it marinate for about 5 minutes.
