Air Fried Almond Crusted Artichoke Hearts

w/ jalapeno & lemon aioli

 

Hmmm! These artichokes are yummy & kosher for passover! Almond flour makes a filling & delicious breadcrumb substitute. I have started to make so many more things I would usually get at restaurants because of the air frier!

I have been converted to the air frier & I will brag about how amazing it is!!!

The company we use is Kalorik Maxx Air Fryer Oven. It is the perfect size although a little pricey it is worth it! Usually air fryers look big but can only do small batches at a time. The Kalorik maxx is wide with a lot of space its like a mini convection oven! Plus it has a bunch of other functions. We love it in our house! We test out all different kind of recipes. It's fun!

Yes, tequnically you can make everything in a regular oven

but I think it takes more time & the crunch from the air fryer is legit!

A mistake people think about the air fryer is that it needs zero oil. It needs such a tiny bit of oil. If you prefer no oil then it will keep things a little dry. We have a spray avocado oil that we leave next to the fryer to lightly coat whatever we are cooking.

It is such a small amount of oil but it helps gives the food that crunch we want!



Ingredients:


14 oz. can of Whole Artichoke Hearts, (or Quatered Artichokes work too)

1 cup Almond Flour, fine ground

½ cup Potato Starch

1 tsp Lemon Pepper seasoning

¼ tsp Chili Powder

¼ tsp Cumin

¼ tsp Garlic Powder

¼ tsp Dried Parsley

â…› tsp Sea Salt


Aioli:

**I don't think there is a vegan mayo for Passover so here is a link to a homemade Vegan Mayo


¼ cup Vegan Mayo

1 small Jalapeno (don't like spicy just leave out the jalapeno)

1 tbsp Lemon Juice

¼ tsp Black Pepper

â…› tsp Sea Salt


Directions:


  1. Drain the artichoke hearts from the can but save a small bowl of its liquid. If the artichokes are whole cut the artichokes in half (if they are already quatered then leave as is). Be gentle with the artichokes because they are delicate & you want to make sure they stay together.

  2. In one bowl add potato starch & in another bowl add almond flour & mix in the seasonings. In a third bowl you should already have some of the artichoke can liquid.

  3. Start by coating the artichoke in the potato starch & then into the artichoke liquid & after coat with the almond flour. Repeat this until all artichokes are fully coated & lined on the air fryer tray.

  4. Lightly spray the artichokes with avocado oil. Air fry for 12 minutes at 425 degrees.

**If you don't have an air fryer you can place in the oven at 400 degrees for 25 minutes. After 20 minutes flip & bake for another 5 minutes.


Aioli:

  1. Cut the jalapeno in half to remove the seeds & rind.

  2. Mince the jalapeno into small pieces.

  3. In a bowl add vegan mayo, jalapeno, & the rest of the ingredients. Mix well.
