Mini Mushroom & Onion Pizzas
w/ Vegan Almond & Basil Cheese 😋
I made these for a dinner party last week & they were such a hit! Since I was feeling a bit under the weather, I didn't want to have to make so much but wanted a fun dish. Since Trader Joe's carried Kosher pizza dough I figured why not do this little cute pizza's. The almond cheese was something I've just wanted to make for a while & it really gives a fresh unique taste! I loved the reaction when people tried it! You should try making alternative cheese from nuts! It's fun & just adds something a little different!
Ingredients:
1 Package of Trader Joe’s Pizza Dough (found in the fridge section by the dips)
1 ½ Cups Marinara Sauce
1 Yellow Onion
8 Crimini Mushrooms
16 pieces of Basil
½ Tsp Nutritional Yeast
Almond Cheese:
1 Cup Soaked Almonds (overnight soaked or soaked with boiling water for 20 minutes)

½ Lemon Juice
3 Tbsp Nutritional Yeast
1 tsp Garlic Powder
½ tsp Apple Cider Vinegar
1 Tbsp Finely chopped Basil
â…› tsp Salt
Directions:
Preheat oven to 400 degrees
Start by cutting the onion into small cubes. In a large skillet or pan add a little oil & cook down the onions. While onions are cooking, cut the mushrooms into quarter inch slices. Add to the pan & cook until they start to get smaller. Add in the marinara sauce. Let cook for about 5 minutes. Set aside
Time to roll out the dough. Clear a space & put down some flour just to make sure the dough doesn’t stick. Roll out the dough as thin and equally as possible. Use a circle cookie cutter or something to cut out 18 little circles! You might have to roll the dough more then once.
If the little circles begin to shrink, just give them a little roll again or just stretch it with your hands.
Lay out the mini crusts on a baking sheet add the marinara sauce mixture onto each piece. Then add a piece of basil to each & sprinkle nutritional yeast on top. Bake for 20 minutes
While the pizza is baking, start making the almond cheese. Drain & then place the soaked almond into a blender. Add the nutritional yeast, garlic powder, & apple cider vinegar. Add water in slowly, about 1/4 cup at a time. Since it doesn’t have so much liquid you will need to use a spatula to move it around. It is best to use the spatula when the machine is off. Once all the water is in the almond cheese the texture should be clumpy & a little moist. Place into a bowl & add in the finely chopped basil & salt. Top the pizza with as much cheese as you prefer! The almond cheese makes a lot so you can use the leftovers on other dishes as well.
