Vegan ~ Gluten Free
Jackfruit Veggie Burgers
These burgers are what's missing at your annual summer BBQ! They are pretty quick to make! They make about 12 regular size burgers. Also, since it's mostly cooked once they hit the grill your really just looking for the grill marks & some smokey grill taste. These can also be made in the oven or on a pan. They are perfect for freezing too!! I saved a bunch of (already grilled) burgers to just pop in the oven for salads, wraps, or another sandwich. I even used one on a croissant, it was incredible!
Ingredients:
1 14 oz. can Jackfruit
1 can Chickpeas
1 Onion
4 Garlic Cloves
1 small Zucchini
1 small Fennel Bulb
2 cups Carrots, shredded 2 big handfuls of Kale
1 handful Parsley (leaves & stems)
1 cup Oat Flour
1 tbsp. Garlic & Herb seasoning
1 ½ tbsp. BBQ sauce
1 tsp Liquid Aminos
1 Flax "Egg" (1 tbsp ground flax & 2.5 tbsp water, mix together & set aside for 5-7 minutes)
Directions:
Cut the onion & fennel bulb into small cubes. Then mince the garlic & add the onion, fennel, & garlic into a pan with a little oil. Saute for about 5 minutes.
Then add the shredded cups of carrot & saute for another 5 minutes.
Drain the jackfruit from the can & pick out any hard seeds while shredding the jackfruit apart. Then add to the pan with bbq sauce & liquid amino. Mix & saute everything for about 10 minutes on medium-low. Set the mixture to cool.
Next, drain the can of chickpeas & add the jackfruit mixture into the food processor along with the kale, parsley, & garlic seasoning.
Pulse everything until it's blend & finely mixed together. Make sure to pulse it so it's choppy (the texture shouldn't be like hummus it should be small chopped pieces).
Make the flax egg by adding the ingredients into a small bowl. Set aside for 5-7 minutes.
Move the vegetable mixture into a large bowl & add the flax egg, oat flour. Mix it all together. The texture should be semi-wet. Make sure to fully mix it all well together & set it aside for a few minutes before shaping it into burgers.
Shape the burgers & place them on a hot sprayed grill. Leave on the grill for about 7 minutes on each side to get nice grill marks. Pay attention so it doesn't burn.
***If making it on the stove, add a little oil & cook until both sides are lightly golden.
***In the oven, bake at 350 degrees for about 15 minutes then flip for another 5
