Jackfruit Latke

w/ creamy sweet & spicy mustard sauce

 

Oh does this recipe remind me of childhood! My family always had tuna latkes on Chanukah & basically all year round. I would eat them up. I can honestly say this comes so close to the taste & I am happy about the fact that no fish were harmed in the process of these Jackfruit Latkes!

This recipe is quick & the starch holds it all together so no eggs are needed! I can't wait to make these all week long! I did both air fry & regular pan fried. The ones pictured are the air fry! You really can't tell the difference! The only thing about the air fry it does take about 25 minutes but the healthier option is well worth it! I would just keep a close eye on them in the air fryer too because you don't want to burn them.

Another little note- This recipe was perfect for 2 people so if you are looking or more feel free to double or triple the recipe!


HAPPY CHANUKAH!


Ingredients:

1 can (567 grams) Jackfruit

¼ cup Bell Pepper, chopped

¼ cup Purple Onion, chopped

¼ cup Corn Starch (can use potato starch or arrowroot powder)

2 tbsp. Capers

2 tbsp. Vegan Mayo

1 tbsp. Stone Ground Mustard

½ tsp. Lemon Pepper seasoning

⅛ tsp. Sea Salt

For frying: ¼ cup Avocado Oil

Air fry: Avocado Oil spray (I get the Chosen brand which lives next to my air fryer.)


The sauce:

¼ cup Vegan Mayo

1 tbsp. Mustard

½ tsp. Maple Syrup

½ tsp. Hot Sauce



Directions:

  1. Drain the Jackfruit into a strainer & shred into a bunch of pieces.

  2. Then squeeze out as much of the liquid from the jackfruit. This is an important part because too much water will keep the latkes from holding together so much sure to really squeeze out the water. Once its fully squeezed out add to the jackfruit to a bowl.

  3. Next, chop the pepper & onion into small cubes. Add to the bowl with the rest of the ingredients.

  4. Mix everything together well & form your latkes. To form the latke I take about an ice cream scoop size & form it into a ball then flatten them. You can make them as thin or as thick as you'd like. My husband personally likes them thin.

For Frying: Add oil to a pan & fry until golden brown on both sides.

Air fry: Lay out the latkes on the air fry tray. Lightly spray the latkes with the avocado oil. Then fry for 25 minutes at 420 degrees.


The sauce:

  1. Mix all the ingredients into a small bowl.

  2. Dip your latkes!!
