Ginger Carrot Soup

Garnished w/ Sweet Potato, Vegan Yogurt, & Hemp Seeds

 

This soup really came about because I had leftover homemade vegetable broth & leftover colorful carrots. This is honestly how a lot of my recipes come about. I try to focus on the ingredients I have & create recipes so that I have less food waste. Recipes don't always need to follow rules, which is why I love cooking. It gives me the chance to express my freedom. Most of the time the food we have in the house is what we know we like, so kinda follow you're intuition & your're taste buds! You might find you have what it takes to cook or if you're a recipe follower creativity is still there. You can add something extra or missing something, see what else might be good to replace it.



Ingredients:


4 medium Carrots (I used rainbow carrots, that's why the soup is browner than an orange color).

4 cups Vegetable Broth

1 small Yellow Onion

1 medium Turnip

2 cloves of Garlic

1 tsp minced Ginger

1 tbsp Soy Sauce

1 tbsp Nutritional Yeast

¼ Cinnamon

¼ tsp Chipotle Cinnamon (or add ¼ tsp cinnamon & ⅛ chili powder)

⅛ tsp Nutmeg

⅛ tsp Sea Salt

Fresh Cracked Black Pepper to taste


Optional garnish: (per bowl) 1 tsp Vegan Yogurt, 3 pieces of roasted Sweet Potato (or you can also add a few croutons), a pinch of Hemp Seeds, & Pasley.


Directions:

  1. Mince two cloves of garlic & ginger. Then cut the onion into inch cubes (doesn't need to be exact since the soup will be blended).

  2. Add a quarter cup to an 8 qt pot & add the garlic, ginger, & onions. Saute for about 5 minutes on a medium-low flame.

  3. Then wash the turnip & cut it also into inch cubes & add to the pot; add more liquid if needed.

  4. Wash & cut the carrots. The carrots can be cut into 4 or 5 pieces & add to the pot.

  5. Add in the rest of the vegetable broth & cover the soup. Bring the soup to a boil first & then keep it on a simmer for 30 minutes.

  6. Once the veggies are soft, let the soup cool down a little before blending it. I used a hand blender, but if I had my high-speed blender I would have blended it up in there.

  7. After the soup is completely pureed add in spices. Mix well & bring the soup back to a boil.

  8. Place in a bowl & add garnishes if you prefer!


Serve & Share with Love
