Spicy Lotus Root Chips
Lotus Root is a crunchy low calorie rhizome vegetable with many health benefits. Lotus root is filled with electrolytes, vitamin C, high in zinc, & copper. The flavor is very simple & can take on the flavors you provide it with but still keep its watery crunch. The texture is similar to a water chestnut! If you haven't tried them yet you must!
Ingredients:
1 Raw Lotus Root
2 Cloves Garlic
1 Inch piece Ginger
1 Small Holland Red Hot Long Pepper (remove the seeds!)
3 Tbsp Maple Syrup
2 Tbsp Worcestershire sauce
2 Tbsp Liquid Aminos
Directions:
Prep the lotus root by washing & peeling it. Thinly slice the lotus about a quarter of an inch thick. Place in a bowl of water after you slice them. They are similar to a potato so they will start to oxidize if not in water.
Mince the garlic & ginger. Heat a large pan with avocado oil. Saute the garlic & ginger for about 30 seconds. Then place the lotus roots equally around the pan. Set flame to on medium low. Pour the liquid ingredients into the pan & cover. Constantly give them a mix or flip. Then add in hot pepper. If the liquid dries out just add a little water to steam the lotus but don't pour too much. Cook until the lotus roots begin to soften but still have a crunch. They should get nice brown sear on them. Hope you enjoy this recipe!
