*The Bagels themselves are Vegan but I put scrambled egg inside. You can load the bagel with whatever you wish! Hope you enjoy the recipe.

Baked Oat Four Bagels
When I started this recipe I thought I was making doughnuts. These taste delicious but I decided to cut them open! Maybe this recipe should be called Baked Doughnut Sandwich but the texture & flavor seemed more like cinnamon bagels. So I went with it! Experimenting in the kitchen can form some incredible recipes.
Ingredients:
2 cups Oat Flour 2 Flax “Eggs” (2 tbsp flax meal and 5 Tbsp water) ½ Cup Almond Milk ¼ Cup Xanthan Gum ½ Cup Maple Syrup 1 Tbsp Baking Powder 1 tsp Baking Soda 1 tsp Cinnamon ½ tsp Nutmeg A generous pinch of Salt
Instructions:
Preheat oven to 350°F.
In a small bowl make the flax egg & set it aside for 15 minutes.
In another bowl add the dry ingredients into a bowl. Then mix in the Flax eggs, Maple Syrup, and Almond milk. Spray the baking doughnut tray with coconut oil and bake for 20 minutes. Let them cool & cut with a bread knife.
You can fill the bagel with anything you prefer. In the picture I did, sauteed onions, arugula, scrambled eggs, & kalamata olive hummus from Esti_foods.
